This Baked Bean Instant Pot recipe has been my go to side dish since I bought this kitchen gadget.

Saltfish and Baked Beans.

Corned Beef and Baked Beans. 

Tripe and Baked Beans. 

Pork and Baked Beans. 

The list can get longer but these are just a few of the different ways Jamaican enjoy baked beans.

Where Can You Buy Dried Pinto Beans?

To think about it, pinto beans are not popular in Jamaica as they are here in the United States. Most people are not even sure what type of beans we use to make baked beans because they subject themselves to using canned and processed foods.

How to Cook Baked Beans in an Instant Pot?

Making baked beans usually takes me at least two hours with the fact that the beans need to be cooked before actually making the baked beans. Cooking the beans with the instant pot is not only quick but easy because there are only two steps. The first step is to pour all the ingredients in the instant pot, then thickening the sauce once the beans are cooked. 

Unlike traditional American Baked Beans, which are actually baked in the oven with bacon or ham, these beans are usually simmered. American baked beans are eaten as a side dish while Jamaicans use these beans to stretch the food. Stretching food in Jamaica is the ideal thing when there is a big family.

Who wouldn't want a full plate of food?

Instead of just getting your normal, boring plate of food (protein, starch and vegetable), the added beans adds more protein and helps to give a filling meal.

Onion baked beans are vegan, vegetarian and gluten free. 

The ingredients used in this instant pot onion baked beans are:

Pinto beans

They are extremely nutritious. They're an excellent source of protein, fiber, vitamins, and minerals. These nutrients may provide several benefits, including improved blood sugar control and heart health. Pinto beans are also rich in various antioxidants and may help lower your risk of chronic disease.

Onions

They contain antioxidants and compounds that help in fighting inflammation and reduce cholesterol levels; all of which may lower heart disease risk. The potency of onions and the anti-inflammatory properties can also help to reduce high blood pressure protect against blood clots.

Dry Mustard Powder

Dry mustard powder is made from ground mustard seeds. By itself, dry mustard has no flavor, taste or even a smell. This powder must be combined with water to release the essential oil which gives it flavor. Then you can add other things, such as vinegar, beer, or wine to modify the base flavor. In this case, water and other spices to keep a healthy diet.

Natural Jamaican Molasses

Molasses has health benefits that include relief from menstruation cramps.  Molasses is a thick syrup that people use as a natural sweetener. It is made from sugar cane and in the mother of the brown sugar we know today. Rich in vitamins and minerals, molasses is excellent for baking, cooking and even smoothies. This thick dark sweetener has the lowest sugar content of any sugarcane product.

Garlic Powder

Let's start with what garlic powder actually is, it's a ground and dried out version of the fresh garlic bulb. Minced garlic is fresher than garlic powder and has a stronger flavor. Whether you buy full garlic bulbs and mince them yourself or purchase them pre-minced in a jar, the taste and aroma will be more intense than that of garlic powder. When it comes to most dishes, fresh garlic is the way to go.

  1. Add all the ingredients, Except Cornstarch, to the instant pot and stir.
  2. Turn the instant pot on to the pressure cook setting, high pressure for 35 minutes. Ensure to check to see that the vent is sealed to prevent any accidents.
  1. Once the instant pot is done cooking, allow the it to sit for five minutes before releasing the steam. After 5 minutes, release the steam with the quick release method. 
  2. When the valve drops, open the lid and turn the instant pot setting to saute for 5 minutes.

  1. Remove about ¼ cup of the liquid from the beans and pour into a small bowl. Then add the cornstarch to the hot liquid and mix until everything is dissolved. 
  2. Pour the cornstarch slurry into the beans and stir. Allow the sauce to thicken to the desired consistency. For a thicker sauce, you may mash some of the beans or add an extra tablespoon of cornstarch.

Ingredients
  

  • 1 Cup Dried Pinto Beans Rinsed
  • 4 Cups Water
  • 1 Large Onion Chopped
  • 1 Teaspoon Mustard Powder
  • 1 Teaspoon Salt Optional
  • ½ Teaspoon Black Pepper
  • 1 Tablespoon Molasses
  • ¼ Cup Brown Sugar
  • ⅓ Cup Ketchup
  • 1 Tablespoon Corn Starch

Instructions
 

  • Add all the ingredients, Except Cornstarch, to the instant pot and stir.
  • Turn the instant pot on to the pressure cook setting, high pressure for 35 minutes. Ensure the vent is sealed.
