Coconut rice is a delicious dish that is widely served as a side dish. It is creamy, fluffy with a slight sweetness that goes perfectly well with a variety of main dishes.

Although making coconut rice is pretty straightforward, the cooking gets even more simplified when you are using an instant pot.

An instant pot is a miracle, especially for those who don't like extensive cooking or are tired or in a hurry. It uses a technique that cooks any meal faster than when cooking on the stove.

Ever since I bought this kitchen gadget, I fell in love with it! It is awesome. You can cook so many dishes in it and in minimum time. I have tried chicken, beef, and even pork. The cooking time was reduced to half. Literally!

When my main dishes came out as a success, I decided to move a step further and try making rice in them. And my first choice was my all-time favorite coconut rice. And let me tell you, I'm glad I tried it because the result was perfection. Above all, it took me 10 minutes to get my rice on the plate.

What is Coconut Rice?

Coconut is a delicious side dish that goes perfectly well with several main dishes. It is a light and creamy dish that has a slightly sweet note to it. Coconut rice has its roots in several different cuisines, mostly from Asian countries. However, it is also a staple dish in Jamaican cuisine and is loved by many. The best thing about thing dish is its unique flavor and ease of preparation. It is a flavorsome addition to any dinner table.

Can You Cook Coconut Rice in an Instant Pot?

The answer is yes! You can definitely cook coconut rice in an instant pot. in fact, I would highly recommend that you do that. That's because, with an instant pot, you can cook the rice in less than the time it would take while cooking on a stove. So, if you are tired, don't feel like cooking, or have unexpected company, an instant pot will save the day!

What is the Best Rice for Coconut Rice?

Well, it depends upon your choice. You can use any type of rice you want, whether it is long-grain or short-grain. I like to use long-grain rice for coconut rice. That's because every grain stays separate. Furthermore, thanks to the low starch content in long-grain rice, the dish doesn't get sticky or mushy. The best option is either basmati rice or jasmine rice for making coconut rice.

However, if you like the sticky or mushy texture of rice, you can go with short-grain rice.

How to Avoid Burning Rice in an Instant Pot?

If you plan to make a smaller rice quantity in a large instant pot, let me tell you that it is not a very good idea. In fact, there are huge chances that you will end up with burned rice. So, if you have a large instant pot, you can either double the recipe or place a smaller pot on the cooking rack inside your instant pot. Add a little water before cooking the rice, and your rice will come out fresh and un-burnt.

How to Cook Coconut Rice in an Instant Pot?

Cooking coconut rice in an instant pot is a piece of cake! You just have to follow the steps as mentioned below:

Step 1: In the instant pot bowl, add coconut milk, water, thyme, salt, and rinsed jasmine rice.

Step 2: Stir well so that everything is well combined.

Step 3: Next, you have to place the instant pot lid, seal it and set the pot to low pressure, and cook for about 4 minutes.

Step 4: Wait for the steam to release naturally.

Step 5: Take off the lid, remove thyme spring and serve alongside your favorite dish.

What to serve with instant pot coconut rice?

If you are thinking about what to serve with coconut rice, let me tell you the options are unlimited. If you are looking for ideas, here are a few you will love:

Curries: Whether it is Indian curry or Thai, coconut rice seems the perfect side for the curry. Because of its slightly sweet flavor and creamy texture, it compliments spicy curries like nothing else. Well... How about Instant Pot Curry Chickpeas???

Stir fry: Whether it is a chicken stir fry or vegan, you would want to serve it with coconut rice. The crunch from the vegetables and creaminess of the rice is a perfect balance.

Steak: Choose something unconventional and serve coconut rice alongside steaks. The gravy on top will bring everything together.

Baked fish: Baked fish goes perfectly well with anything. When served on a bed of coconut rice, things get even better. Whether it is cod or salmon, you can pair it up with coconut and enjoy.

Roasted vegetables: If you don’t feel like making anything special, simply roast vegetables with garlic, rosemary, salt, and pepper, and you can enjoy it with coconut rice.

Can You Store Instant Pot Coconut Rice?

Yes, you can store instant pot coconut rice in an air-tight container and place it in the refrigerator. It will stay fresh for up to three days. Furthermore, you can also reheat the rice in an instant pot. Add a bit of water or coconut milk to the rice and reheat. It will restore its original texture.

Tips and Tricks for Perfect Coconut Rice

Although making coconut rice is fairly simple, here are a few things you should keep in mind:

Make sure you close the lid lightly and set the steam release to seal.

Never fill the instant pot more than the halfway mark.

Choose to release the pressure naturally.

Make sure you are not using an instant pot for cooking small quantities. Otherwise, the rice will burn, or the instant pot with show a burn indication.

Coconut Rice in Under 10 Minutes, Thanks to Your Instant Pot

Ingredients

  • 2 Cups Jasmine Rice, Rinsed
  • 1 Cup Coconut Milk
  • 1 Cup Water
  • 1 Teaspoons Pink Himalayan Salt
  • 2 Thyme Sprigs

Instructions

  1. Add all ingredients to the bowl of the Instant Pot.
  2. Stir to combine.
  3. Set your Instant Pot to low pressure and cook for 4 minutes and use the natural release method.
  4. Once the pressure is released, remove thyme sprigs, fluff and serve
