Seasoning the Chicken
- 4 Whole Chicken Drumsticks Cleaned and Washed
- 4 Whole Chicken Thighs Cleaned and Washed
- 2 Teaspoon Salt
- 1 Teaspoon Black Pepper
- 1 Teaspoon Smoked Paprika
For the Stew
- 1 Tablespoon Jamaican Browning
- 1 Teaspoon Scotch Bonnet Chopped
- 2 Medium Potatoes I used 5 Baby Potatoes
- ½ Green Bell Pepper Chopped
- 1 Medium Onion Large Diced
- 6 Cloves Garlic Chopped
- 1 Medium Carrot Chopped
- ½ Cup Water
- ¼ Cup Ketchup
- 1 Tablespoon Brown Sugar optional
- 1 Teaspoon All Purpose Seasoning like abodo
- 1 Tablespoon Vegetable Oil
Seasoning the Chicken
Add the cleaned and washed chicken to a bowl and add the ground spices ( salt, pepper, paprika and all purpose seasoning).
Use your clean hand or a large spoon to mix the spices into the chicken.
Cover and allow the chicken to sit until ready to cook.
Stewing the Chicken
Turn the instant pot to the saute option and all the vegetable oil.
Once the oil is heated, add each piece of chicken one side down and brown for 3 minutes on each side. You may want to do this step in two batches.
As soon as all the chicken pieces are browned. Turn the instant pot on to the pressure cook setting on high for 6 minutes.
Add all the vegetables, browning, water and ketchup. Stir and cover. Allow the chicken and vegetables to cook for 6 minutes.
Once the timer is up, turn the instant pot to saute for 3 minutes to allow the sauce to reduce.
Clean the chicken by trimming any excess fat from the chicken.
Also, wash the chicken with any citrus or vinegar.
