Ingredients
  

  • 2 Pounds Honeycomb Tripe

To Clean the Honeycomb Tripe

  • 2 Tablespoons Salt
  • 1 Quart Water
  • ¼ Cup White Vinegar

To Season the Honeycomb Tripe

  • 1 Tablespoon Jamaican Curry Powder
  • 2 Teaspoons Smoked Paprika
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon salt
  • 6 Whole Pimento

To Cook the Honeycomb Tripe

  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Jamaican Curry Powder
  • 1 Cup Onion Chopped
  • ¼ Teaspoon Scotch Bonnet Pepper Optional
  • 1 Large Carrot Peeled and Diced
  • 1 Cup Bell Peppers Chopped
  • 1 Sprig Thyme
  • 6 Cloves Garlic Chopped
  • ½ Cup Water
  • 1 Can Cooked Butter Beans Rinsed

Instructions
 

To Clean the Honeycomb Tripe

  • Run the honeycomb tripe under cool water, then place flat on a cutting board. 
  • Using a knife, scrape the tripe to get rid of any unwanted fat that may be present.
  • In a bowl, add cool water and salt and/or vinegar, then place the honeycomb tripe back in to soak. 
    Soak the honeycomb tripe for at least 15 minutes before rinsing with cool water. Then cut into ½ inch pieces.

How to Make Jamaican Tripe and Bean

  • Turn the instant pot to the saute setting and add olive oil and the second half of the Jamaican curry powder.
  • Once the curry powder begins to sizzle, use a wooden spoon to stir the olive oil and curry powder together for about 30 seconds.
  • Add the seasoned honeycomb tripe and saute for 5 minutes, stirring in between.
  • After 5 minutes, turn the instant pot off and add the onions, scotch bonnet, carrots, bell pepper, thyme, garlic and water.
  • Set the instant pot to cook on high pressure and cover.
    Ensure the vent in sealed.
  • Allow the tripe to cook for 40 minutes, then use the natural pressure release to vent the steam.
  • When all the pressure is released, turn the instant pot on to the saute setting for 5 minutes and add the cooked butter beans.
  • Stir occasionally until the sauce is thickened and reduced but still runny.

Notes

Soaking the Honeycomb Tripe
Soaking the honeycomb tripe in salt and vinegar will help in tenderizing the tripe and also get rid of any impurities. 
While the tripe is soaking, this is the perfect time to prepare your vegetables and get all the other ingredients ready.
