Run the honeycomb tripe under cool water, then place flat on a cutting board.
Using a knife, scrape the tripe to get rid of any unwanted fat that may be present.
In a bowl, add cool water and salt and/or vinegar, then place the honeycomb tripe back in to soak. Soak the honeycomb tripe for at least 15 minutes before rinsing with cool water. Then cut into ½ inch pieces.
