Lentil Curry Instant Pot Recipe
Vegan Curry Lentil with Jamaican Spices
- 1.5 Cups Dried Brown Lentils Rinsed
- 1 Can Coconut Milk Unsweetned
- 2 Tablespoons Jamaican Curry Powder
- 2 Teaspoons Salt or to Taste
- 1 Medium Onion Diced
- 1 Large Carrot Diced
- 1 Cup Red Pepper Diced
- 2 Sprigs Thyme
- 2 Small Dried Chili
- 2 Tablespoon Olive Oil
Turn the instant pot on to the saute setting and add the olive oil.
Once the olive oil is heated add the Jamaican curry powder and the rinsed lentils and stir.
Allow the lentil to get toasted for about 3 minutes.Add the onion, red pepper, chili pepper, carrots, thyme and salt (optional).
Select cancel, and add coconut milk. Stir to combine the ingredients and seal the lid tightly. Ensure the vent is sealed to prevent any mishaps.
Cook at high pressure for 7 minutes and use the quick pressure release to allow the steam vent.
Stir and Serve.
