Lentil Curry Instant Pot Recipe

  • Instant Pot or Pressure Cooker

  • 1.5 Cups Dried Brown Lentils Rinsed
  • 1 Can Coconut Milk Unsweetned
  • 2 Tablespoons Jamaican Curry Powder
  • 2 Teaspoons Salt or to Taste
  • 1 Medium Onion Diced
  • 1 Large Carrot Diced
  • 1 Cup Red Pepper Diced
  • 2 Sprigs Thyme
  • 2 Small Dried Chili
  • 2 Tablespoon Olive Oil


  • Turn the instant pot on to the saute setting and add the olive oil. 
  • Once the olive oil is heated add the Jamaican curry powder and the rinsed lentils and stir.
  • Allow the lentil to get toasted for about 3 minutes.Add the onion, red pepper, chili pepper, carrots, thyme and salt (optional).
  • Select cancel, and add coconut milk. Stir to combine the ingredients and seal the lid tightly. Ensure the vent is sealed to prevent any mishaps. 
  • Cook at high pressure for 7 minutes and use the quick pressure release to allow the steam vent.
  • Stir and Serve.
