Ingredients
  

  • 8 Ounces Chicken Feet Cleaned
  • 1 Cup Pumpkin Cubed
  • 1 Large Carrot Peeled and Chopped
  • 3 Cloves Garlic Smashed
  • ½ Packet Jamaican Pumpkin Soup Mix
  • 1 Teaspoon Salt
  • 2 Stalks Scallion Chopped
  • 1 Sprig Thyme
  • 3 Pimento Balls or All Spice Berries

For the Jamaican Dumplings (Optional)

  • 1 Cup All Purpose Flour
  • ¼ Teaspoon Salt
  • ¼ Cup Water

Instructions
 

To Make the Dumplings

  • In a medium bowl, add the flour and salt and mix together.
  • Add the ¼ cup of water and mix together to form a dough.
  • Knead until the dough is smooth then separate into 6 equal pieces.
  • Use the palm of your hand to form the dough into circular shapes and set aside.

To Make the Chicken Foot Soup

  • Dump all the ingredients into the instant pot, expect the dumplings, and stir.
  • Set the instant pot to 20 minutes and allow it to pressure cook on high.
  • Once the timer is up, allow the steam to escape using the quick release method.
  • Open the instant pot and add the dumplings, then set the timer back to 2 minutes and pressure cook on high.
  • Once the timer is done, its time to serve. Remove the thyme stems and pimento seeds before servings.

For a thicker soup, mash the pumpkin chunks before pressure cooking the dumplings.
