Traditional Jamaican Chicken Foot Soup in 20 Minutes
Second Pressure Cook for Dumplings
Instant Pot Pressure Cooker
Peeled and Chopped
Jamaican Pumpkin Soup Mix
or All Spice Berries
For the Jamaican Dumplings (Optional)
All Purpose Flour
To Make the Dumplings
In a medium bowl, add the flour and salt and mix together.
Add the ¼ cup of water and mix together to form a dough.
Knead until the dough is smooth then separate into 6 equal pieces.
Use the palm of your hand to form the dough into circular shapes and set aside.
To Make the Chicken Foot Soup
Dump all the ingredients into the instant pot, expect the dumplings, and stir.
Set the instant pot to 20 minutes and allow it to pressure cook on high.
Once the timer is up, allow the steam to escape using the quick release method.
Open the instant pot and add the dumplings, then set the timer back to 2 minutes and pressure cook on high.
Once the timer is done, its time to serve. Remove the thyme stems and pimento seeds before servings.
For a thicker soup, mash the pumpkin chunks before pressure cooking the dumplings.
