- 2 8 Ounce Lobster Tails
- 4 Tablespoons Unsalted Butter Softened
- 2 Tablespoons Minced Garlic
- 4 Teaspoons Fish Spice or Old Bay
- A Handful Cherry Tomatoes Cut in Halves
- 1 Whole Lemon Juiced
Butterfly each lobster tail using a knife or a pair of scissors. (See detail instructions above)
Sprinkle 2 teaspoons of fish spice onto each butterflied lobster tail. Ensure that the lobster tails are evenly coated.
Add 2 tablespoons of softened butter to each lobster tail, covering the flesh.
Freeze for 5 minutes.
Place the cast iron skillet on a medium high heat.Once heated, add the lobster tails, butter side down and press onto the tails to create an ever sear. Sear for 5 minutes, then flip. Once flipped, sear for another 3 minutes before adding the garlic and cherry tomatoes. After 2 minutes,turn the flame off. Once the flame is off, squeeze lemon juice over the lobster tail and allow them to sit in the skillet with the flame off for another 2 minutes.
