Ingredients
  

To Clean to Cow Foot

  • ¼ Cup White Vinegar or half of a lemon
  • Water as Needed
  • 1 Tablespoon Salt

To Season the Cow Foot

  • 2 Pounds Cow Foot Cut into Rounds
  • 1 Cup Onion Chopped
  • 1 Cup Bell Peppers Chopped
  • 1 Sprig Thyme
  • 3 Cloves Garlic Chopped
  • 2 Stalks Scallion Chopped
  • 1 Medium Carrot Peeled and Sliced
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Black Pepper
  • 1 Teaspoon Salt
  • 3 Whole Pimento Seeds
  • ½ Teaspoons Scotch Bonnet

To Cook the Cow Foot

  • ½ Cup Water
  • 2 Teaspoons Jamaican Browning
  • 1 Cup Butter Beans or More if Desired

Instructions
 

To Clean the Cow Foot

  • In a bowl, add the cow foot round with enough water to cover it along with the salt and vinegar or lemon juice.
  • Allow the cow foot to sit for about 5 minutes before rinsing with cool water.
  • Use a small knife to get rid of any hair that may be present on the skin.

To Season the Cow Foot

  • Pat the cow foot dry with a piece of paper towel and add:
    Onions, Garlic, Bell Peppers, Garlic, Thyme, Scallions, Carrots, Smoked Paprika, Black Pepper, Salt, Pimento Seed and Scotch Bonnet Pepper.
  • Using you hand or a large spoon, mix all the spices and vegetables onto the cow foot until fully incorporated. Allow to sit at room temperature until ready to cook.
    Best marinated overnight!

To Cook the Cow Foot

  • Turn the instant pot on to the pressure cooker setting on high and set to 40 minutes.
  • Add the seasoned cow foot along with ½ cup of water. Close the instant pot and ensure the vent is sealed
  • Once the timer is up, allow the pressure to release naturally for at least 5 minutes before using the quick pressure release.
  • Stir and saute for 5 minutes, or until the desired sauce consistency is reached.

Notes

Browning the meat is optional, but you may brown each piece of cow foot using the saute option of the instant pot.
If you do not have access to an instant pot, a regular stove top pressure cooker will do.
