Chicken feet recipes are fairly rare. Maybe just the thought of what it actually is may scare some people. Some people like chicken feet and others might not, but the most important thing is the proper cooking method. Usually, chicken feet take up to two hours, even more, to cook, depending on the size of the chicken feet. However, no matter the size or quantity, this Instant Pot Chicken Feet recipe will be cooked and ready in thirty minutes. 

How to Cook Chicken Foot Stew?

Cooking chicken feet, or chicken paws as some may call it, is pretty simple but may take a while if making it stove top. Chicken foot stew is just like any other Jamaican stew, with the exception of browning the meat.

 If you plan to cook chicken foot stew on the stove top, follow the steps below.

  1. Wash and season the chicken feet. Chop your desired vegetables and set aside.
  2. Lightly coat the bottom of a large and thick skillet with vegetable oil bring to a high heat
  3. Add the seasoned chicken feet to the hot oil and saute on high for about 5 minutes. Stirring in between,
  4. Add about a cup of water for every pound of chicken feet, along with the cut vegetables and simmer on low heat for about 2 hours. You may need to add water in between to ensure there is liquid for cooking and prevent burning.
  5. Serve with Instant Pot Jamaican Rice and Peas or Instant Pot Jasmine Rice

On the other hand, if you are planning on cooking chicken foot stew in an instant pot, follow the steps below.

  1. Wash and season the chicken feet. Chop your desired vegetables and set aside.
  2. Dump all the ingredients in the instant pot along with a half cup of water or chicken stock, 
  3. Stir and cover then pressure cook for 25 minutes on high pressure. 
  4. Once the timer is up, stir and simmer for another 5 minutes. 
  5. Serve with Instant Pot Jamaican Rice and Peas or Instant Pot Jasmine Rice

What does Instant Pot Chicken Feet Taste Like?

Once cooked, chicken feet have a gummy feel, not fatty but gummy. Chicken feet are naturally tough, so it needs a long time to cook. In order to get the gummy meat off the chicken feet, you will need to suck the flesh off the bones. Some people even chew the bones to get that extra calcium.

How to Clean Chicken Feet? 

There are some people who don’t clean the chicken feet and I am not sure why not. The little sharp tips on the chicken feet are sharp claws that are inedible for humans but edible for dogs.

Other than cutting the sharp tips off the ends of the chicken feet, you will need to wash them. You can wash them with cool water and some citrus or a little vinegar. 

Season the chicken feet as you desire before cooking or follow my recipe below.

What is Jamaican Browning?

Jamaican browning is simply caramelized sugar which can be store bought or home made. It may be difficult to find the Jamaican browning in any supermarket other than the Caribbean ones. Luckily, Jamaican browning can be found here on Amazon by clicking HERE!

What is Jamaican Scotch Bonnet Pepper?

I am sure if anyone has tasted authentic Jamaican food, there would be a hit to a lot of spice, depending on the dish. That essentially is the taste of Jamaican scotch bonnet pepper. Jamaican scotch bonnet pepper is one of the hottest peppers according to the scoville scale. Although the Jamaican scotch bonnet pepper is milder than the ghost chili, it is one of the hottest peppers in the world.

Substitute for Jamaican Scotch Bonnet Pepper for this Instant Pot Chicken Feet Recipe?

You can use a little or a lot of scotch bonnet pepper depending on your preference. However, the seeds contain most of the heat. Some people may discard the seeds and stem but those seeds add more flavour to the dish as well as for planting. 

Substituting the Jamaican scotch bonnet pepper will alter the authenticity of any real Jamaican dish. However you can substitute Jamaican scotch bonnet pepper with any of the following: 

  1. Chili Flakes
  2. Habaneros
  3. Serrano Pepper (fresh or dried)
  4. Jalapeno
  5. Ghost Chili (a little goes a long way)

Chicken Paws vs Chicken Feet 

Chicken feet have been recently called chicken paws, since gaining a bit of awareness. Growing up, I have always called them chicken feet, “chicken foot” to be exact. 

There is not much of a difference in whether they are called chicken feet or chicken paws. They are essentially two different terms for the same item.

Ingredients
  

To Season the Chicken Feet

  • 1 Pound Chicken Feet Cleaned (see cleaning instructions above)
  • 1 Teaspoon Salt
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Black pepper
  • 1 Tablespoon Jamaican Browning
  • 1 Teaspoon All Purpose Seasoning like adobo

To Cook the Chicken Feet

  • 1 Medium Carrot Chopped
  • 6 Cloves Garlic Smashed
  • 1 Small Onion Chopped
  • ½ Bell Pepper Chopped
  • ½ Cup Chicken Stock or water

Instructions
 

  • Place the cleaned chicken feet in a large bowl and all all the spices and browning.
  • Use your hand or a large spoon to massage the spices and browning onto the chicken feet.
  • Dump the seasoned chicken feet into the instant pot, along with the vegetables and chicken stock (or water).
  • Cover the instant pot and set to high pressure for 25 minutes.
  • Once the timer is up, use the quick release method to allow the steam to escape.
  • Turn the instant pot to saute for 5 minutes and stir the chicken feet stew to allow the sauce to cover everything.
  • Once the timer is done, it is time to serve.
