Jamaican Tripe and Bean
Jamaican Curry Tripe and Bean

Jamaican Tripe and Bean is beyond delicious! Made with fresh vegetables, herbs and spices, this recipe is sure to take you back to the Islands.

The first time I tasted Jamaican Tripe and Bean, was at maybe the age of 6, while visiting some cousins in the garrison. We went to a little cook shop and bought one box of food each, costing only $50 Jamaican dollars at the time. I was not sure what to order so my older cousin got some brown stew tripe and baked beans so I decided to try as well. To my surprise, it was absolutely delicious. Needless to say, I asked my grandmother to make some for Sunday dinner.

It was not until I migrated to the United States, before I tried curry tripe and bean, in the Bronx to be specific. The taste was pretty distinctive yet so familiar, I had to try making it.

What is Tripe and Bean?

Tripe is what Caribbean people refer to as cow or beef stomach or intestine.

There are a few different tripes on each chamber of the stomach, however, the honeycomb tripe is the one most used and eaten in Caribbean culture.

When it comes to the beans used to make Jamaican tripe and bean, the most popular beans used are:

  1. Butter Beans
  2. Kidney Beans
  3. Baked Beans - Try my Vegan Baked Beans Recipe!

However, you may use any cooked beans you may like.

How to Clean Tripe for Any Tripe Recipe!

Cleaning a piece of tripe is not as intimidating as it seems, it is in fact easier than you think. Whether you try this tripe recipe or any other, the cleaning process will remain the same.

  1. Run the honeycomb tripe under cool water, then place flat on a cutting board.
  2. Using a knife, scrape the tripe to get rid of any unwanted fat that may be present.
  3. In a bowl, add cool water and salt and/or vinegar, then place the honeycomb tripe back in to soak.
  4. Soak the honeycomb tripe for at least 15 minutes before rinsing. Now you are ready to follow any tripe recipe.

How to Cook Honeycomb Tripe?

Cooking tripe will take a long time, unless you plan to use a pressure cooker.

Honeycomb tripe can be cooked by boiling, steaming or braising. The tripe has a tough texture, and will need to be tenderized in order to be digested.

If you plan to pressure cook the honeycomb tripe, like in this recipe, the time would be cut by two thirds.

Cooking Jamaican Tripe and Bean in a Stove Top Pressure Cooker!

Whether cooking in a stove top pressure cooker or an electric pressure cooker, the instructions will be the same.

The stove top pressure cooker and the electric pressure cooker are different in the sense that the electric pressure cooker has multiple functions at the press of a few buttons.

Some of the most uses functions of an electric pressure cook are:

  1. Yogurt Making
  2. Sou-Vide
  3. Saute
  4. Slow-Cooking
  5. Rice Cooker
  6. Air Fryer
  7. Roaster
  8. Broiler

WHAT IS JAMAICAN CURRY POWDER?

Jamaican curry powder is essentially the queen spice of Jamaica. It made up of an array of herbs and spices such as:

1.Turmeric Powder

2. Coriander Powder

3. Mustard Seed Powder

4. Fenugreek Seeds

5. Allspice or Pimento

6. Cumin Seeds

  1.  Ginger Powder

8. Black Peppercorns

9. Scotch Bonnet Pepper

All these spices and seeds are dry roasted before blending into the famous Jamaican Curry Powder we know.

How to Make Curry Powder for Jamaican Tripe and Bean?

Although you can buy premade Jamaican curry powder, I prefer to make my own. It is super simple to make, and you can store it in an air-tight bottle for later use as well. for this, you will need:

2 tbsp Turmeric Powder

1 ½ tbsp whole coriander seeds

1 ½ yellow mustard seeds

¾ tsp fenugreek seeds

¾ tbsp pimento seeds

1 ½ tsp cumin seeds

1 ½ tsp ginger powder

¾ tsp Black Peppercorns

⅛ tsp Dried Scotch Bonnet Peppers

Roast all ingredients in a dry pan until they are fragrant. Cool them and add all the ingredients to a spice blender. Blend until you get a fine powder. Store it in an air-tight jar.

Soaking the honeycomb tripe in salt and vinegar will help in tenderizing the tripe and also get rid of any impurities.
