The first time I tasted Jamaican Tripe and Bean, was at maybe the age of 6, while visiting some cousins in the garrison. We went to a little cook shop and bought one box of food each, costing only $50 Jamaican dollars at the time. I was not sure what to order so my older cousin got some brown stew tripe and baked beans so I decided to try as well. To my surprise, it was absolutely delicious. Needless to say, I asked my grandmother to make some for Sunday dinner.
It was not until I migrated to the United States, before I tried curry tripe and bean, in the Bronx to be specific. The taste was pretty distinctive yet so familiar, I had to try making it.

Tripe is what Caribbean people refer to as cow or beef stomach or intestine.
There are a few different tripes on each chamber of the stomach, however, the honeycomb tripe is the one most used and eaten in Caribbean culture.

How to Clean Tripe for Any Tripe Recipe!
Cleaning a piece of tripe is not as intimidating as it seems, it is in fact easier than you think. Whether you try this tripe recipe or any other, the cleaning process will remain the same.
- Run the honeycomb tripe under cool water, then place flat on a cutting board.
- Using a knife, scrape the tripe to get rid of any unwanted fat that may be present.
- In a bowl, add cool water and salt and/or vinegar, then place the honeycomb tripe back in to soak.
- Soak the honeycomb tripe for at least 15 minutes before rinsing. Now you are ready to follow any tripe recipe.
How to Cook Honeycomb Tripe?
Cooking tripe will take a long time, unless you plan to use a pressure cooker.
Honeycomb tripe can be cooked by boiling, steaming or braising. The tripe has a tough texture, and will need to be tenderized in order to be digested.
If you plan to pressure cook the honeycomb tripe, like in this recipe, the time would be cut by two thirds.

How to Make Curry Powder for Jamaican Tripe and Bean?
Although you can buy premade Jamaican curry powder, I prefer to make my own. It is super simple to make, and you can store it in an air-tight bottle for later use as well. for this, you will need:
2 tbsp Turmeric Powder
1 ½ tbsp whole coriander seeds
¾ tsp fenugreek seeds
¾ tbsp pimento seeds
1 ½ tsp cumin seeds
1 ½ tsp ginger powder
¾ tsp Black Peppercorns
⅛ tsp Dried Scotch Bonnet Peppers
Roast all ingredients in a dry pan until they are fragrant. Cool them and add all the ingredients to a spice blender. Blend until you get a fine powder. Store it in an air-tight jar.

Ingredients
- 2 Pounds Honeycomb Tripe
To Clean the Honeycomb Tripe
- 2 Tablespoons Salt
- 1 Quart Water
- ¼ Cup White Vinegar
To Season the Honeycomb Tripe
- 1 Tablespoon Jamaican Curry Powder
- 2 Teaspoons Smoked Paprika
- 1 Teaspoon Black Pepper
- 1 Teaspoon salt
- 6 Whole Pimento
To Cook the Honeycomb Tripe
- 2 Tablespoons Olive Oil
- 1 Tablespoon Jamaican Curry Powder
- 1 Cup Onion Chopped
- ¼ Teaspoon Scotch Bonnet Pepper Optional
- 1 Large Carrot Peeled and Diced
- 1 Cup Bell Peppers Chopped
- 1 Sprig Thyme
- 6 Cloves Garlic Chopped
- ½ Cup Water
- 1 Can Cooked Butter Beans Rinsed
Instructions
To Clean the Honeycomb Tripe
- Run the honeycomb tripe under cool water, then place flat on a cutting board.
- Using a knife, scrape the tripe to get rid of any unwanted fat that may be present.
- In a bowl, add cool water and salt and/or vinegar, then place the honeycomb tripe back in to soak. Soak the honeycomb tripe for at least 15 minutes before rinsing with cool water. Then cut into ½ inch pieces.
To Season the Honeycomb Tripe
- Place the ½ inch pieces of honeycomb tripe in a bowl and add, Jamaican Curry Powder, Smoked Paprika, Black Pepper, Pink Himalayan Salt and Whole Pimento.
- Using your hand or a large spoon, combine all the spices onto the tripe until everything is evenly distributed. Set aside until ready to cook.
How to Make Jamaican Tripe and Bean
- Turn the instant pot to the saute setting and add olive oil and the second half of the Jamaican curry powder.
- Once the curry powder begins to sizzle, use a wooden spoon to stir the olive oil and curry powder together for about 30 seconds.
- Add the seasoned honeycomb tripe and saute for 5 minutes, stirring in between.
- After 5 minutes, turn the instant pot off and add the onions, scotch bonnet, carrots, bell pepper, thyme, garlic and water.
- Set the instant pot to cook on high pressure and cover. Ensure the vent in sealed.
- Allow the tripe to cook for 40 minutes, then use the natural pressure release to vent the steam.
- When all the pressure is released, turn the instant pot on to the saute setting for 5 minutes and add the cooked butter beans.
- Stir occasionally until the sauce is thickened and reduced but still runny.
- Serve best with Instant Pot Jamaican Rice and Peas or Instant Pot Jasmine Rice
