Jamaican Pressed Green Plantain (Tostones)
Ingredients
- 3 Green Plantains
- 1 Teaspoon Course Sea Salt
- Vegetable Oil for Frying
Instructions
- Peel the skin from the green plantains and cut each plantain into 6 equal pieces.
- Heat about a half an inch of oil in a large frying pan on medium high heat.
- Fry each piece of plantain on each side for about 2 minutes
- Remove from the frying pan and drain on paper towel
- Between two flat surfaces, smash each piece of fried plantain with a pinch of course sea salt. Repeat this process until all the plantain pieces are smashed.
- Return each piece of smashed plantain into the hot oil and fry until crispy. Be careful not to overcrowd the frying pan to ensure even crispiness. This should take about 2 minutes per batch.
- Drain excess oil on paper towel and serve. Best eaten when hot and crispy.
