Cooking Italian sausage in the instant pot takes no more than 5 minutes. Usually, I would take the sausage casing off the sausage itself and break the logs in smaller pieces. Breaking the sausage into smaller pieces and removing the casing will reduce the cooking time. The Italian sausage casing has a different texture than the ground meat on the inside but it creates a seal for the meat and juices.

Instant Pot Italian Sausage
Equipment
- Wooden Spoon
- Cutting Board

Ingredients
- 3 Links Sweet or Spicy Italian Sausages Removed from the Casing and Broken into Bite Size Pieces
- 1 Small Onion Chopped
- 1 Ear Corn Stripped and Kernels Removed ( you can use a cup of store bought canned corn kernels)
- 3 Garlic Cloves Sliced
- ½ Cup Cherry Tomatoes Washed
- 1 Teaspoon Salt Optional
- 1 Cup Jasmine Rice Rinsed
- 1½ Cups Water
- 1 Tablespoon Olive Oil
Instructions
- Turn the instant pot to the saute option and add the olive oil
- Once heated, add the Italian sausage pieces and brown for 2 minutes on each side.
- After 4 minutes, dump all the other ingredients into the instant pot and stir.
- Turn the instant pot to pressure cook on low pressure for 3 minutes and allow the rice and vegetables to cook. Ensure the vent is sealed.
- Once the timer is up, allow the instant pot to sit for 5 minutes before releasing the remaining pressure.
- Stir and serve.
